1. The charcoal burns and releases smoke
As charcoal combusts, it produces aromatic compounds and smoke that rise up and surround the meat. These particles cling to the surface, penetrating the outer layers and giving the meat that distinctive smoky depth.
2.Intense heat sears the surface
Charcoal burns hotter than gas, reaching temperatures that trigger the Maillard reaction a chemical process where proteins and sugars on the meat's surface break down and recombine. This creates the caramelised, golden-brown crust packed with complex savoury flavours.
3. Drippings hit the coals and vaporise
As the meat cooks, fat and juices drip down onto the hot charcoal. They instantly vaporize into flavorful smoke that rises back up and bastes the meat from below. This feedback loop adds richness and intensifies the overall grilled flavor with every passing second.
